Eggplant and Cherry Tomato Pasta

Hey everyone,
It’s funny, when Craig and I were debating a move back to NY, he would say “but it’s so gross in the summers” and I’d say “it’s really not that bad.” But this week it is that bad: swampy, humid, hot, smelly. Still, I love this city. Every morning when I walk Winston I just marvel at all the life swirling by: dads on bikes with their kids on the back, too-attractive couples in workout gear going for a jog, dog walkers, nannies, crossing guards. It’s amazing.
And even though it’s too hot to turn on the stove, certain summer ingredients are just begging to be cooked up into something good. Such was the case with the eggplant that I still had in my fridge from my last eggplant pasta and a bunch of bright red cherry tomatoes that I bought at Union Market…
