Hey Thursday friends,

Are you a rack of lamb lover? Me too. And yet, despite my almost two decades of cooking experience, I’ve never cooked one. Why? Because they’re so damned expensive.

Thank goodness I received a random gift certificate for an online butcher and I used it to buy a rack of lamb that arrived around Christmas. I froze it and then, this past weekend, I finally cooked it. And it was sooooo soooo good.

I used a David Tanis technique, slathering the whole thing with a Dijon-anchovy-garlic marinade and roasting over smashed potatoes. CLICK HERE for the whole recipe and let me know if you make it! It’s a pretty foolproof method.
