Let's Eat More Vegetables in 2025
Including long-cooked broccoli toasts, bread-and-cheese-stuffed squash, and vegan collard greens.

As I may have mentioned, I recently joined a CSA (recommended in Christine Muhlke’s newsletter) called Farm to People. I put a pause on it when we went to Washington for Christmas, but this Monday a new box arrived and I was astounded and slightly overwhelmed by the giant mass of fruits of vegetables I received for just $45.
Seriously: it’s more than enough food to subsist on for a week, if you have enough grains and proteins to stretch things out. And $45 for a week to feed two people? That’s a bargain, if you ask me.
The arrival of the box corresponds beautifully with my new year’s resolution: eat more vegetables! It’s a simple resolution. It doesn’t have to do with losing weight (always a losing proposition), joining a gym (also a losing proposition), or quitting drinking (such a losing proposition, I already need a drink). All this resolution asks is that you stock up on veg, cool it on the meat (reading the review of Fear Factories in the NYT certainly cooled me on my carnivorousness), and get creative in the kitchen.
