Hey everyone,

What if I told you that you could make soup for dinner one night and then turn it into a side dish the next night? Would you say that I was making it up? Would you be calling me a liar? ARE YOU CALLING ME A LIAR?

Sorry, didn’t mean to get heated. I’m just so enthusiastic about the two meals that I made on Monday and Tuesday nights. The first meal, as you may have gleaned form the newsletter title and the first paragraph, was a soup. White bean and escarole soup, in fact, a classic Italian combination….
