Great culinary minds think alike! Just as I was about to tell you about this crunchy salad with a peanut dressing that I made for lunch yesterday, I saw this new post on Smitten Kitchen where Deb makes a cucumber crunch salad, also with a peanut dressing.
Suffice it to say: it’s boiling hot in NY and a cooling, crunchy salad is just what the doctor ordered. My version wasn’t as polished as Deb’s. In fact, I just grabbed ingredients that came in my CSA and started chopping them.
