Hey everyone,

Ramps! Remember those? When I lived in NYC the first time (2004 - 2011), ramps were all the rage. Every chef had a ramp dish on their menu. Every newspaper food section gave recipes for ramps. Ramps were so omnipresent, there was even a ramp backlash. Ramps went from cool to uncool to maybe cool again?

If you don’t know what a ramp is, let me show you….

If you glued those leaves on the right back on to the bulbs and stems on the left, you’d have ramps! They’re basically baby leeks and they taste utterly like springtime.

There are many ways to use ramps in your cooking, but the best I’ve encountered doesn’t involve cooking them at all.
