Hey Thursday friends,

February’s over and looking back on our birthday month (Craig’s Feb. 2nd, mine Feb 18th), I have to say the culinary highlight may have been these enchiladas I made for Craig’s birthday early in the month.

Starting with Craig’s mom Julee’s recipe (a family legend), I weaved in some bits and bobs from Ali Slagle’s NYT recipe, and added my own flourish (charring the tortillas). The result is this recipe for Birthday Enchiladas. CLICK HERE to read it / print it / share it!
