Hey everyone,

Is that an appetizing picture? You know that’s the trick of the trade, right? Leading with the sexiest food picture you can? Well let’s throw caution to the wind and begin with a bowl of meat.

It’s a picture of a bowl of meat because the end product has yet to be created. To wit: my friend Ryan is visiting and when I asked him what he wanted me to make him for dinner he requested spaghetti and meatballs. Yesterday I studied a bunch of recipes and settled on one that had bread soaked in milk (always the best meatball ingredient), tons of garlic and parsley, pork and beef, AND — the ingredient that fascinated me the most — six ounces of hand-chopped pancetta (or in my case, bacon).
