I’ve been thinking a lot this week about salad.
David Lebovitz recently posted a video of himself making a very French salad for his paid subscribers that’s so good, it made me question all of my values… at least when it comes to lettuce. His approach is so delicate and thoughtful. My approach is, shall we say, a bit more brazen. Here’s a video I just made of my salad process:
As you can see, I go heavy with the dressing and the cheese. David, on the other hand, has such a delicate touch: it’s a whisper of barrel-aged red wine vinegar, a suggestion of Dijon mustard, a smattering of finely minced shallots, a drizzle of exquisite Lucques olive oil. He buys his lettuce whole and washes the leaves before tearing them in such a way as to honor their shape. It’s a salad that I aspire to someday recreate, and yet it’s also a salad that doesn’t feel very much like me. Which leads to the question: what does your salad say about you?
