As a former pie-maker who quit years ago after too many gummy and/or soggy bottoms, what about blind-baking the pie crust? Was the bottom of your pie crust crisp enough?
I can attest to the clamors for the Spring Wedding Soup (which I’m about to have leftover for lunch) - gorgeous with lemon and dill. Will be pulling my Dinner book off the shelf to make some of Melissa Clark’s great recipes including the muhammara. And that pie crust Adam? Stunning.
