Dishwasher pods! Ideally place your LC piece in a container that will allow the whole thing to soak and throw a couple of pods into the hot water. Leave for a few hours/overnight and all will be well!
Don’t use bleach because it will erode the shiny smooth surface. I learned this the hard way. After talking to a salesperson at a Le Creuset store I’ve look at the inside of my pans as memories of great meals.
It's been a short ribs moment chez here, too. I love that you stir fried your leftovers - I made a hachis Parmentier with mine. What I didn't make was a gorgeous Basque Cheesecake - next on my list. To help with the stained inside, I recommend from personal experience to fill with water, dump in a good amount of baking soda (like quarter of a box), bring to a boil and then let simmer for as long as half hour. Then let cool, dump the water, scrub with Bar Keeper’s Friend and a scrubby sponge.
I keep coming back to a baking soda paste left on the inside of the pot for as long as I can stand it then lots of scrubbing. Not perfect, but makes me feel better to reduce the oily baked on stains.....
You could ask Dorie or David Lebovitz about cleaning your Le Creuset pot - I think they would have good advice. For gentle but thorough cleaning of pots and pans, I like the Japanese Kamenoko Tawashi Vegetable Scrub Brush, which I believe Wirecutter recommended. I purchased it from Amazon.

when i am in brooklyn. i literally get take out from Ki Sushi, weekly. totally obsessed.

Every time after using my Le Creuset, I use baking soda. Everything comes off. After 5 years, it still looks new.
