Whenever I have leftover mascarpone, I make tomato sandwiches. Yes--mascarpone. No mayo. It is slightly sweet and decadent. A schmear on the bottom, tomatoes, radish slices, olive oil, then salt and pepper.

Just the other day I made myself a tomato sandwich with cottage cheese, basil, sliced tomato and sprinkle of sea salt and drizzle of olive oil. Like yours it looked and tasted yummy :)

Vegetable glut is why pickles were invented! I'm also a big fan of Michael Symon's pickling recipe too. Pickled carrots, however you make them, are The Best!

Meanwhile here in Montana, I got my first amazing teensy sweet cherry tomatoes this week. It's going to be tomato-a-rama here for the next month and a half.

Home made granola is such a thoughtful and useful gift for new parents! Great idea. This week after seeing your friend’s Alison a Roman tart I’ve made three Alison Roman recipes including that tart (that turned out so well I was incredibly proud of it! I also made her roast chicken with the fennel seeds (twice as one I had to chuck the whole thing out after my husband discovered that pad thing from the packaging floating in the butter and juice!) and her chocolate cake from Sweet Enough. Her recipes always turn out - if you don’t include packaging in the meal.

I have 24 tomato plants in my garden and starting at the end of June there is either tomato toast for breakfast and or a tomato sandwich or salad for lunch. There is nothing better than a tomato that is picked warm from the vine and sliced. I prefer a sandwich on toast or crusty bread like a baguette for contrast. Spanish tomato toast is fantastic with good olive oil.

Oh my, that looks so good -- what could be more perfect on a heat wave day when turning on an oven is an act of self-inflicted cruelty?

I wrote to you a while back about the digestive benefits of kiwi... well here's something to try when you get tired of them, or if you just aren't a fan: try cutting one up, mashing it and then freezing it. Let's call it kiwi granita! Very refreshing as the temps threaten to annihilate us all...

The Bellingham tomato sandwich: Tomato from Joe’s Garden, Asiago Sourdough from Great Harvest Bakery, Basil Garlic purée stirred into Best Foods. Toast the bread on one side only( toasted side on inside) and “ Ta-dah” it’s summer!
