But I never peel the peaches, they add color and flavor to the pie. Next time, FORCE yourself to step away from the peeler. You'll never go back!
Fruit pies are my favorite and peach, especially! You can skimp on flour by 1/2 cup (2 cups only) and make a VERY buttery pastry. And I have tried vanilla in peach pie and I think it's not as good as plain - too cloyingly vanilla-y for me. No need to smoosh the pastry - just fold it in thirds like a letter a'la laminating dough, and it's easy and so flaky and buttery. For a 9" pie pan/plate, 8 cups of fruit is my go to. :-)
