i know this is nearly a month old now but i'm just catching up on all my poor newsletters that went unread during the chaos of the holidays. i am a mason jar fanatic (i will put anything in jars and i call it "the jarrening") and, wanting to switch away from plastic i decided to jar my homemade stock once upon a time. i use only name brand, brand new ball jars. it looked so nice and i was so proud. i filled warm jars with warm stock, leaving room for the liquid to expand when it froze. i let them sit on the counter until they were cooled, then put them in the fridge, then moved to the freezer. and things were going well. until one day i went to my freezer and found the jars had cracked into big jagged pieces. so...i will not be doing that again. plus, i so often need to put a container of stock into the microwave to get the last iceberg of stock defrosted and i can't do that with the ball jars. back to the ziploc containers for me. it's not worth the risk considering i usually spend a full day making stock.
