Noma was always a bucket list meal for me (as I'm sure it has been for many), but thank you for allowing me to be at peace with not fulfilling that one before its' closing.
Hah, what a harrowing dining experience! I'm sorry you didn't enjoy it more, but at least you have a very good tale to tell. I had a very similar experience recently after getting sick at an izakaya in Tokyo right before heading to a two-night stay at a luxury ryokan in Kyushu. It was the most we'd EVER spent on accommodations in all of our travels, and I could barely eat any of the very long, drawn out kaiseki dinner, which was course after course of raw fish/shellfish. Let's not even talk about the *specially ordered* soft shell turtle meal we had reserved for the second night.
I made pasta last night- pasta with ramps and asparagus, threw in some spreadable goat cheese (we have great farmers markets!) and some sorrel microgreens. Delicious, quick and easy. Love ramp season!!

My father used to say, the eye also eats. I don’t see anything appetizing in the Noma food. I don’t understand the hype!

Every spring I make Vertamae Smart-Grosvenor’s onion pie (NYT) with ramps from my yard. So beautiful and simple. Try it!!
