i sometimes make homemade tortilla chips, and it really is simple, just cut up corn tortillas and fry them, then i season with salt and tajin. i imagine the pita chips would be the same. however, i just hate frying because it's time consuming and probably most of all, i hate the lingering smell of oil. (even though it's clean oil and i'm only frying tortillas - not meat or fish - The Smell persists!) it's still worth it once in a blue moon because there's just no comparison between deep fried stuff and baked or storebought, and it's probably good deep frying at home isn't more accessible for me lol.

ps, do you think you can use any whey for the pancakes? like leftover from homemade ricotta? or does it have to be from yogurt.
I think the yogurt whey is necessary for the acidity, but I could be wrong!
