David Lebovitz has a Lemon-Almond snack cake recipe (mostly using almond flour with a small amount white flour) and croissants (bought) filled with an almond flour frangipane (croissants aux amandes) that he made recently for a zoom conversation with Yotam Ottolenghi.

For almond flour, I love the NYT GF chocolate chip cookie that uses almond flour, developed by Erin McDowell. I’ve made it many times and always a hit!

Well I'm trying to use up a bag of tapioca flour I got for thickening fruit pies (I think following the excellent Sister Pie cookbook), so you can try that while I try this!

When I saw the recipe for the banana bread using coconut and almond flours, I was certain you were making it for Passover. Not sure about the tapioca flour, but I read potato starch is a good substitute. I am making it for a late Seder dinner Friday, I am sure it will be a hit!!

David Tanis has a really good pear and almond cake that uses almond flour. A lot of keto recipes use those ingredients (I cannot vouch for their goodness though).
